PREP TIME: 1 hour
WHAT YOU WILL NEED?
- 1 whole butternut squash - 2 tbsp pomegranate seed
- 2 tbsp Orange Marmalade - 4 garlic cloves
- Fresh thyme - 3 tbsp olive oil
INSTRUCTIONS
1. Pre heat the oven at 350º F.
2. Carefully cut the butternut squash open lengthways, remove the seeds.
3. Pierce the outer skin of the squash with a knife.
4. Place on a baking sheet, face up.
5. Drizzle the squash with olive oil, sprinkle the garlic, cloves and thyme in the cavity.
6. Seasoned with salt and pepper.
7. Bake in the oven for 40 minutes or until the flesh is soft.
8. Remove from the oven.
9. Drizzle two tablespoons of Happy the Golden Jam Orange Marmalade on top and garnish with the pomegranate seed.

WHAT YOU WILL NEED?
- 1 whole duck
- 4 oranges
- 2 cups of beef broth
- ½ cup organic sugar
- ½ cup white vinegar
- 1 cup white wine
- 3 tbsp olive oil
- 3 tbsp of Happy the Golden Jam Orange Marmalade
INSTRUCTIONS
1. Pre heat the oven to 350º F.
2. Season the duck with salt and pepper and drizzle 3 tbsp olive oil over the duck
3. Place the duck in a shallow roasting pan, breast side up. Allow to roast about 25 minutes per pound or when the internal temperature at the leg reaches 180º F
4. In a saucepan, add the sugar and vinegar and cook until caramelised.
5. Add the juice of 4 oranges and the white wine.
6. Allow this to simmer for 10 minutes.
7. Add the beef broth.
8. Allow this to reduce again for 10 minutes then add the Orange Marmalade.
9. Adjust the seasoning to taste.
10. Bring to a boil and serve.
Option: If you like, at the end, you can add 2 tbsp of Grand Marnier.

- 1 Puff pastry frozen 16 oz - 2 tbsp lemon juice
- 1 cup sundried tomato - 8 tbsp Fig Love Marmalade
- 1 cup crumbled goat cheese - ½ cup toasted pine nut

- 1 cup black olive pitted and split in half

Roast chicken become a delectable experience when basted and glazed with our gorgeous Orange Marmalade.
WHAT YOU WILL NEED?
INGREDIENTS
- 8 chicken thighs
- 3 rosemary sprigs
- Juice of 2 oranges
- 3 garlic cloves minced
- 2 tbsp olive oil
- 4 tbsp Happy the Golden Jam Orange Marmalade
- 2 tbsp balsamic vinegar
- 1 cup crumbled goat cheese
- Salt and pepper to taste
- 1 cup chickpea (optional)
INSTRUCTIONS
Combine chicken, 2 sprigs of rosemary, garlic, cloves, orange marmalade, balsamic vinegar, and juice of 2 oranges. Marinate 4 hours (or preferably overnight)
The next day...
Sear the chicken in a hot pan on the stove for 3 minutes on each side then baste the chicken lightly with some of the marinade. Place the chicken in a baking dish.
Roast the chicken at 220 degrees for 10 minutes then lower the temperature to 190 degrees and bake for an additional 20 minutes. While in the oven, baste the chicken with the marinade, from time to time.
Add the chickpea (optional) and sliced orange on top and cook for another 10 minutes until golden brown or until the chicken reaches an internal temperature of 165 degrees.
Remove from the oven and sprinkle with crumbled goat cheese. Place fresh rosemary on top.

WHAT YOU WILL NEED
Servings: 4 people
- 1 lbs of shrimp peeled and deveined
- 2 tbsp sesame oil
- Juice of 1 orange
- ¼ cup rice vinegar
- 4 tbsp Happy the Golden Jam Orange Marmalade
- 2 tsp ginger
- 1 tsp chili flake
- 2 tbsp soy sauce
- Bamboo skewers
- Bell peppers (optional)
- Mint for décor
- Sliced onion (optional)
- Green onion for decor
INSTRUCTIONS
In a blender mix all the ingredients except the shrimp
Pour the mix into a bowl and add the shrimp
Let it marinate for 1 hour. In the meantime, soak the skewers in water for 30 minutes
Thread the shrimp onto the skewers
Grill 4 minutes on each side brushing some of the left-over marinade
Serve with brown rice and some mint leaves on top and chopped green onion
PS : If you like, add some sliced onion and bell peppers in between the shrimp.
