Beignets with Orange Marmalade

Fantastic homemade beignets that go wonderfully with our Orange Marmalade

Ingredients
  

  • 1/2 cup water
  • 1 tbsp yeast
  • 1/4 cup shortening
  • 1/2 cup sugar
  • 1 tbsp salt
  • 1 cup boiling water
  • 1 cup evaporated milk
  • 2 eggs, beaten
  • 2 1/2 cups flour
  • 1 qt vegetable oil for frying
  • 1 cup confectioner's sugar for "DIPPING"

Instructions
 

  • Pour ½ cup room temperature water into small bowl.  Sprinkle the yeast over the water and let stand for about 5 minutes to dissolve.
  • Combine the shortening, sugar, and salt in a large bowl. Pour the boiling water over the shortening mixture and then stir in the evaporated milk.  Wait for the mixture to cool down until it is lukewarm. Then, add the yeast and water mixture and beaten eggs.
  • Slowly mix in the flour until the dough forms a ball.  Cover the dough with plastic wrap and refrigerate for 30 minutes to 1 hour.
  • Working with a small portion (a little larger than a baseball) at a time, roll out the dough 1/8-inch thick. Cut the rolled-out dough into 2 to 3 inches wide, then cut again in the opposite direction and at an angle, making diamond shapes. 
  • Heat your oil for frying in a deep and wide, heavy-bottomed skillet over medium-high heat to 360 degrees F (180 degrees C)
  • Slide dough slowly into the oil to avoid splattering and deep fry until they puff up and are golden brown, 3 to 5 minutes. Carefully remove “onto” a rack with paper towels underneath and allow to cool until you can handle them.  Place in a clean paper bag with confectioner’s sugar and shake gently until covered generously or, use a sifter to dust the beignets with powdered sugar.

Orange Marmalade Muffins

Ingredients
  

  • 1/2 cup butter (120g)
  • 1/2 cup sugar (100g)
  • 1 egg
  • 1 orange's juice & zest
  • 2 tbsp Happy the Golden Jam Orange Marmalade
  • 1/2 cup flour (120g)
  • 1/2 tbsp baking powder (5g)

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • Mix butter and sugar together until creamy & smooth. A spatula works best.
  • Add egg, orange juice, orange zest, and orange marmalade.
  • Sift together flour and baking powder in separate bowl, then combine with wet mixture.
  • Put the mixture into a muffin tin and cook for 15 minutes @ 350 degrees Fahrenheit.

Fig Love Apple Tart

Ingredients
  

  • 1/2 jar Happy the Golden Jam Fig Marmalade
  • 1 pie crust Store-bought or home-made works great
  • 1 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup almond powder
  • 4 tbsp flour
  • 3-4 red delicious apples

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit.
  • Roll pie dough crust into a pastry pan.
  • Pour 1/2 jar of Happy the Golden Jam Fig Marmalade on top of the pie crust.
  • In a separate bowl, combine the butter and sugar. Cream together with a spatula.
  • To this mixture, add the eggs, fully mixing one in at a time until fully incorporated.
  • Add the almond flour and all purpose flour.
  • Pour this mixture on top of the fig love marmalade in the pastry pan.
  • Slice 3 or 4 red delicious apples and arrange the slices on top of the mixtures, starting along the outer edge and working your way to the center.
  • Bake in the oven for 30 minutes. Et voila!

Crème De Citron Lemon Tart

Ingredients
  

  • 1 package pastry dough Homemade also works great
  • 2 jars Happy the Golden Jam Vegan Lemon Curd (Crème de Citron)
  • Sprig of fresh mint or berries (optional)

Instructions
 

  • Roll pastry dough into pie mold.
  • Cook in the oven according to the package directions or recipe instructions until golden brown.
  • Allow crust to cool, then pour the 2 jars of jam into the crust.
  • Refrigerate for 1 hour. When done, optionally decorate with a sprig of fresh mint or berries of your choice. Et voila!

Roast Turkey with Orange Marmalade, Rosemary and Thyme

Ingredients
  

  • 1 10-lb turkey backbone removed
  • 1/2 jar Orange Marmalade
  • Salt, Fresh Rosemary, Thyme, & Garlic (to taste)
  • 1/2 cup vegetable broth
  • 1 cup white wine

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • Rinse and pat dry the turkey.
  • Place 1/2 jar of orange marmalade in a bowl with salt, fresh rosemary, thyme, and garlic to taste.
  • Spread the mixture evenly over the turkey.
  • Starting with the breast down, rotate the turkey 1/4 rotation every 30-45 minutes.
  • In the last hour, roast the turkey breast-up.
  • In the last 30 minutes, add the white wine to the cooking dish.

Orange Marmalade Roast Turkey

Ingredients
  

  • 1 4-6lb Turkey breast back bone removed
  • 1 jar Happy the Golden Jam Orange Marmalade
  • 4 tbsp unsalted butter
  • 1 cup white wine
  • 1 cup vegetable broth
  • 6-8 sprigs fresh rosemary, finely chopped
  • 6-8 sprigs fresh thyme, finely chopped
  • 2 tbsp herbs de Provence
  • Garlic salt to taste

Instructions
 

  • Heat the oven to 375 degrees.
  • Rinse and pat dry the Turkey.
  • Set it ribs up (breast down)  on a rack in a roasting pan
  • In a small bowl mix together the Orange Marmalade,  4 tbsp of melted butter, 3 sprigs of finely chopped rosemary, 3 sprigs of finely chopped thyme, garlic salt, and herbs de Provence
  • With a pastry brush Cover the turkey on all sides with ¾ of this mixture. Leave ¼ of glaze for the last 20 minutes when the turkey will be breast side up.
  • Place the turkey in the oven for 20 minutes.
  • Add ½ cup of the vegetable broth.
  • After 20-25  minutes, turn the turkey for ¼ rotation (so that it will be on its side.)
  • Add the remaining vegetable broth.
  • Glaze the side that is up for 20 -25 minutes.
  • Do the alternate side this way as well.
  • After 1 hour turn the turkey so that the breast is up. Glaze the breast again using the remainder of the Orange Marmalade mixture. Sprinkle the remaining herbs as well.
  • Allow the turkey to cook for another 15-20  minutes.
  • At the last 5-10 minutes, add the white wine.
  • Et voila!

Marmalade Roasted Carrots

Ingredients
  

  • 8 organic carrots, peeled and cut
  • 2 tbsp Happy the Golden Jam Orange Marmalade
  • 1 sprig fresh rosemary, finely chopped
  • 2 tbsp olive oil
  • salt & pepper, to taste

Instructions
 

  • Peel and cut 8 organic carrots and place on a roasting pan.
  • Combine rosemary, olive oil, orange marmalade, salt, and pepper in a bowl.
  • Spread the muxture evenly over the carrots.
  • Place on a roasting pan in the oven at 350 for 15 mins, rotate frequently.
  • Et voila!
