Marmalade Roasted Carrots

  • 8 organic carrots, peeled and cut
  • 2 tbsp Happy the Golden Jam Orange Marmalade
  • 1 sprig fresh rosemary, finely chopped
  • 2 tbsp olive oil
  • salt & pepper, to taste


  • Peel and cut 8 organic carrots and place on a roasting pan.
  • Combine rosemary, olive oil, orange marmalade, salt, and pepper in a bowl.
  • Spread the muxture evenly over the carrots.
  • Place on a roasting pan in the oven at 350 for 15 mins, rotate frequently.
  • Et voila!
